How to: plan a surprise vacation!

I pulled it off!   First, keep him guessing.
On Valentine's day I put a calendar with "???" on a few dates in March.  I told my hubby not to plan anything on those days because we would be busy...no other clues. 
 Then, you pack his suitcase, take care of any loose ends, and get a ride to the airport.  Hand him your trip confirmation number and have him check-in and get the boarding passes. 
 This is what his face will look like when he finds out he's going to VEGAS!!!  
 Now,  he'll probably ask a zillion questions...don't tell him any details about the trip because....   you will make a Relaxing Travel Magazine with all the trip info for him to look at on the flight.  Is this considered overly cheesy?  Yes!  Are you that kind of wife?  Yes!  Don't forget to fill the magazine cover with lots of fun travel pictures so the two of you can take a trip down memory lane.
 Fill the magazine with "the plan"!  I put weird Vegas facts, hotel info, the hottest restaurants and.....
 Once you arrive to your destination-
You will want to explore the Strip!
But after several hours of sightseeing you will need to refuel.  Try out the little French Bistro at Paris.  We did...and we were happy campers!! 
Steak sandwich with super skinny fries and The Mr. got a blue cheese burger. 
 Put on your walking shoes and burn some of those calories you just consumed at lunch.  Check out all the hotels on the way back to your room.  Don't get ahead of yourself...no one's going to the room until you try your luck on the largest slot machine in the building.
 If your unlucky like us...go up to your room and take a nap.  We love vacation naps....we somehow work them into our schedule every single day when we are away!!!
 Keep your camera safely zipped away in your purse...  no one wants to see you at Coyote Ugly. Next!!!!   Instead,  wait until later int he evening when you make a pizza run in the wee hours of the morning.  There were two (could be more) pizzerias in our hotel...so we, of course, had a taste test before we made the big decision to buy an entire pie.  What do you think we are...crazy?!
 An this is what our picnic looked like....       oh.my.word.     yep, my tummy just growled looking at this mess of yumminess.
 Pull the curtains and sleep in!!  Throw on your swim suit and cross on over to the MGM pool.  You get to relax ALL day.  The walk to the pool is long...like everything in Vegas...   but there are plenty of things to look at along the way.
 One you get to the pool, find the perfect palm tree, spray on your sun screen, and munch on breakfast.  You're in Vegas...you can have anything you want for breakfast.  I chose M&M's.
 Since an entire bag of M&M's isn't enough...you will need to take an adventure on the MONORAIL to grab some lunch!
 Where else but Margaritaville?   Thank goodness we didn't take pictures of what we ate.  It was every bit as unhealthy as the day before.  We're consistent.
 Insert nap here.    Seriously- we don't miss our vacation naps.  Now for some fun,  you will blush after this show.  Cirque du Soleil never disappoints.  Out of the 5 shows we have seen...this was my favorite!!  This is the one MUST I have to put on the list....go see shows.....  as many as you can fit in your schedule.   We will for sure see a show every night the next time we go...   I didn't know if we would be up for it two nights in a row but now I know.... 
 Since you haven't stopped eating this entire trip...why would you stop now?   Load up on some fish and chips...don't forget the hushpuppies.   This will be you last Vegas meal.  Think of it as a farewell feast.  :) 
 After another morning of sleeping in.... wake up, pack your suitcase, and check out of the hotel.  Not so quick-   you have one more stop before the airport.  Ever seen the t.v. shows Pawn Stars?  The line was outrageous and soooo worth it!!
 We walked in the door and immediately saw Rick.  Star struck!!!!
 Important- don't forget to secretly pack items for the both of you to try and pawn.  Before we left I went in The Mr.'s memory trunk and found his old baseball cards.  (we always watch the show and talk about what we would bring if we ever went there.)  I brought an old book from 1900...    we made $0.  They weren't accepting books or sports memorabilia.  We had a great time looking around the shop and seeing some of the items from the episodes.
This 3 day trip will be the perfect getaway for any love birds.  As for now....   sayonaraVegas.  
 Oh, the part that makes my heart all fuzzy...getting home with my little furbabies. 

In all seriousness...get trip insurance.   This trip was almost cancelled several times.  My sweet husband worked most of the time we were there. (I love sightseeing and people watching so it wasn't a big deal to me.)  It just so happened to be an extremely busy week in real estate for him.  But we realized we needed to get back to "us" and not let the stress of our lives get in the middle of our relationship.  The both of us have had lots of unexpected stress and for me anxiety with work.....and this is just what the doctor ordered.  Nothing a little together time and oversized meals can't heal. :)

Not yo momma's meatloaf.....

No offense to my momma or my MIL.....   :)

I haven't ever tasted a meatloaf that was, well, yummy.   Never been a fan.  The Mr. looooves meatloaf and I have attempted to make it one other time.  Fail.   I used way too much brown sugar for the glaze. Gag.   
I love the "throw whatever you have in the fridge in a bowl and bake it" idea.   So,  I was determined to try it again but with ingredients that we like.  I didn't measure anything, I used ground turkey, and I baked it in a muffin tin.  Success!!!!

In a big bowl I put:
Ground Turkey
Lawry's Seasoned Salt
Crushed Peppercorn
1 Egg
Chopped Onion
Chopped Mushrooms
Cheddar Cheese
Soy Sauce
Worcestershire Sauce
Ketchup (lots)
Breadcrumbs
I mixed it all up and added a more of the items above depending on the way it looked.  Seriously, no real measurements..sorry. 
Then I mixed lots of ketchup, a small squirt of mustard, and a shake of Worcestershire sauce and I put a dollop on top of each muffin scoop.
Bake for 45 minutes at 350 degrees. 
(Spray each tin and put some water in the tins not used so they don't burn in the oven.) 
 Unlike momma's dinner...  you can even serve these little bites of deliciousness with nothing green and/or no mash taters. (which I always heard was a MUST when making traditional meatloaf.)  We were rebels tonight and had 2 yellow sides...I know, crazy!!!!
This recipe was husband approved....  and he even went back for seconds.    Oh, the satisfaction of my hubby having a full tummy courtesy of me.   It's all about the small stuff.
