You're gonna want to write this down!!!!

I tried 3 recipes from Pinterest.....aaaaaand all 3 were sooooo yummy!  So, go grab your pen and cutsie recipe book and write these down!!!!
Mozzarella-Tomato-Avocado Salad
I put this on top of grilled lemon pepper chicken with zucchini on the side. 
My foodie pictures are never yummy looking.  But...believe me....this was soooo fresh and delicious!
Taco Pizza Casserole
I didn't write down a recipe for this....but it was so easy and fulfilling. 
3 flour tortillas
refried beans
lean ground beef
2 packets of taco seasoning (follow directions of the back)
1 can of mexi-corn
1 can of black beans
1 small jar of salsa
1 bag of mexican blend shredded cheese
1 small can of chopped olives
shredded lettuce
1 small diced tomato
sour cream
I cooked the meat and added the corn and black beans.  Then I added the both packets of taco seasoning and water.  (check the back of the taco packets to see how much water to add)  In a casserole dish, I sprayed the bottom and put one tortilla on the bottom and spread refried beans on top of the tortilla.  Then layer the meat/corn/black bean mixture and a layer of cheese.
You get the point....another tortilla, refried beans, meat/corn/black bean mixture, and cheese....and so on.  I finished it with a tortilla, poured on the salsa, and topped it with cheese.  It cooked at 400 degrees for about 20-30 minutes......until all the cheese is bubbly. 
I let it cool for a little bit and then added all the toppers!!!  Lettuce, black olives, tomatoes, and sour cream.
Pineapple Hawaiian Chicken Crock-Pot
Oh yes...a crock pot recipe.....  you know I am all about these easy dinners!!!
check out the recipe card below....3 ingredients...I know.....   I served it with rice.  Although it was wonderful.... it is not something we would normally eat for dinner....  it was a sweet dish.  Next time I will make a side of veggies to serve with this meal.  
 My local supermarket didn't have the Archer Farms Hawaiian BBQ so I bought Pineapple Teriyaki. 
We have a fridge full of leftovers....and I looooove leftovers!!!  Have you made any Pinterest recipes?

Okay, get the food off your brain and switch gears!!!!  The Mr. turned 34 last week and we went to Cirque De Soleil Dralion to celebrate!!!!  If you have ever been to one of their shows....you get it when I say...WOW!!!   They are so amazing.  We look forward to seeing a Cirque show every year.  Last year we went to OVO. 
The picture we took this year didn't turn out...so I had thought it would be fun to post pictures from our previous shows!!!  A few years ago we went to the Cirque show at Disney world.....we loooved this show!!!!
I know we may not go to one every year in the future....but I would like this to be one of  "our things".  I want to soak up all the time I can with my hubs since we are a kidless family.  Hopefully our family will grow in the next few years....   we know that this time together is so precious and we intend to enjoy every bit of it!   And you know one of the things that makes our little world go 'round and 'round.......
These little furbabies keep us pretty happy!   Although they have at least 20 kitty battles a day.....they can be pretty darn sweet with each other too.    Last but not least...I gotta leave you with a confession. 
I have been to Hobby Lobby 3 times in the past 2 weeks.  I have started buying new Fall and Christmas decorations.  It is July.   I have seriously been dreaming about setting up fall decor and cooking fall food.   Do I have a problem??!!

A Golf-themed party!!!!

As you know,  I had The Mr.'s childhood friend come into town last weekend for his B-day gift!!!   We spent the whole weekend surrounded by friends.  I decided to throw an official party for him while all our friends soaked in the 100 degree weather poolside.  The  boys played several hours of pool volleyball...and these games get SERIOUS!!!!  I think it is too funny!!!
I stole several recipes from Pinterest......  Have I said that LOVE Pinterest?!?!?!  
Arnold Palmer's are a MUST when throwing a golf themed party!!
buffalo ranch chicken dip, cold cut sandwiches, chips and salsa
hummus, jalapeno ranch dip, bean dip, chicken salad sandwiches, tall pretzels, and the Favorite: cream cheese stuffed strawberries. (cream cheese icing inside scooped out strawberries....then top it with crushed graham crackers.  Watch. Out.  So good!!)

I had cake balls and a cake made with plain white icing.  I thought it would be fun to decorate it myself.....and make it more personal.  We covered the cake with golf tee's and topped it with golf gear and a flag for hole # 34.  The cake balls (or cake Golf Balls) were put on top of fake moss along with real golf balls.  It was cheesy...but I just loved it and so did The Mr. 
Our little furbabies slept through most of the party.  They were comfy...just hanging out on our bed!!!
 Earlier in the week...our friend brought her sweet little man over.  Oh boy!   Ollie l-o-v-e-d him!!!!  They had a grand ole time!!!   He is pointing to Ollie;s nose in this picture!!!   So sweet!!!
Of course, the weekend came to an end....sadly.     We had to say "goodbye" to our buddy.  Tear...tear..
 We finished the perfect weekend with our kitties!!!!  (one giant kitty ...might I add.)
 We plan to spend many evenings at home with these furbabies...we are all partied out!!!!!

Meal Planning...Pinterest Style

Monday- Tomato, Mozzarella and Avocado Salad.  Grilled Chicken.  Grilled Corn.
Tuesday- Layered Taco Pizza
Wednesday- Hawaiian BBQ Chicken and Rice.  Baked Zucchini
Thursday- The Mr.'s Birthday dinner.  :)
Friday- Piled High Sammie's

I finally jumped on the Pinterest ban-wagon.  I personally think an extra day should be added to the week...just so I can get all my Pinterest hours up to my satisfaction.  I. can. not. get. enough.  I have so many projects going through my head.  I want to make sure I keep my Envy under control and use the website as a tool to better our life or just for pure fun.  I can see how the site could make me "want, want, want"....basically I need to keep myself in check and that's why I'm putting it into words.  For now.....  I am enjoying all the wonderful recipes!!!  I am putting two on my meal planner for next week.  1.Tomato, Mozzarella and Avocado Salad  2. Hawaiian BBQ Chicken     Recipes and Pictures will follow!!!!!

On another note.....are any other sista teachers starting to have dreams about school?   It will be my 7th year as a teacher and I still get anxious excited for Back-to-School.  It consumes my brain!!!!!   Gotta enjoy these long days while they last!!!!!

Hint: it's shiny !!!!

The Mr. is turning the big 34!!   Weeks ago I told him I had a "hint" for his birthday present.  I told him his gift was shiny.      Oh man.....    he thought he was getting a new watch.  WRONG. 
I had his childhood best bud fly in town from Nebraska.  While The Mr. was golfing with his dad.....I bought party supplies for the weekend, picked up his buddy from the airport, and set the scene for when he returned.  The Mr.'s shiny present jumped in the pool and put a big red bow on his "shiny" head!!!!!  and we waited for the reveal!!!!!
The surprise was a success!!! The Mr. jumped in the pool all smiles and said "what's this guy doing here?" 
We met a few other childhood friends out for an evening of laughs, old high school stories, and dancing! (Only dancing for the girls of course.......       the boys couldn't get away from the pool tables!!!!)  I don't ever see friends from high school since I grew up about an hour away from my old town.  But The Mr. is still so close to most of his childhood buds.  Any time we go out for dinner or to meet friends......  he sees someone he knows from growing up!!!!   I think it is neat.  I could listen to their "young and dumb" stories all night long!!!!!  
Please note that I look like a drowned rat......  I was a dancing queen!!!!!
After several games of pool we headed back to our house and had......LATE NIGHT SNACKS!   Chips, dip, sandwiches,      basically anything we could get our hands on!!!!
We have a fun filled weekend planned.  I'm so glad my hubs is getting this special time with his friend.   He told me last night that it was one of the greatest gifts he has ever received.   Mission accomplished.
