I tried 3 recipes from Pinterest.....aaaaaand all 3 were sooooo yummy! So, go grab your pen and cutsie recipe book and write these down!!!!
Mozzarella-Tomato-Avocado Salad
I put this on top of grilled lemon pepper chicken with zucchini on the side.
My foodie pictures are never yummy looking. But...believe me....this was soooo fresh and delicious!
Taco Pizza Casserole
I didn't write down a recipe for this....but it was so easy and fulfilling.
3 flour tortillas
refried beans
lean ground beef
2 packets of taco seasoning (follow directions of the back)
1 can of mexi-corn
1 can of black beans
1 small jar of salsa
1 bag of mexican blend shredded cheese
1 small can of chopped olives
shredded lettuce
1 small diced tomato
sour cream
I cooked the meat and added the corn and black beans. Then I added the both packets of taco seasoning and water. (check the back of the taco packets to see how much water to add) In a casserole dish, I sprayed the bottom and put one tortilla on the bottom and spread refried beans on top of the tortilla. Then layer the meat/corn/black bean mixture and a layer of cheese.
You get the point....another tortilla, refried beans, meat/corn/black bean mixture, and cheese....and so on. I finished it with a tortilla, poured on the salsa, and topped it with cheese. It cooked at 400 degrees for about 20-30 minutes......until all the cheese is bubbly.
I let it cool for a little bit and then added all the toppers!!! Lettuce, black olives, tomatoes, and sour cream.

Oh yes...a crock pot recipe..... you know I am all about these easy dinners!!!
check out the recipe card below....3 ingredients...I know..... I served it with rice. Although it was wonderful.... it is not something we would normally eat for dinner.... it was a sweet dish. Next time I will make a side of veggies to serve with this meal.
My local supermarket didn't have the Archer Farms Hawaiian BBQ so I bought Pineapple Teriyaki.

Okay, get the food off your brain and switch gears!!!! The Mr. turned 34 last week and we went to Cirque De Soleil Dralion to celebrate!!!! If you have ever been to one of their shows....you get it when I say...WOW!!! They are so amazing. We look forward to seeing a Cirque show every year. Last year we went to OVO.
The picture we took this year didn't turn out...so I had thought it would be fun to post pictures from our previous shows!!! A few years ago we went to the Cirque show at Disney world.....we loooved this show!!!!
I know we may not go to one every year in the future....but I would like this to be one of "our things". I want to soak up all the time I can with my hubs since we are a kidless family. Hopefully our family will grow in the next few years.... we know that this time together is so precious and we intend to enjoy every bit of it! And you know one of the things that makes our little world go 'round and 'round.......
These little furbabies keep us pretty happy! Although they have at least 20 kitty battles a day.....they can be pretty darn sweet with each other too. Last but not least...I gotta leave you with a confession.
I have been to Hobby Lobby 3 times in the past 2 weeks. I have started buying new Fall and Christmas decorations. It is July. I have seriously been dreaming about setting up fall decor and cooking fall food. Do I have a problem??!!

I went to Hobby Lobby today & bought my kid an ornament...ha! I couldn't believe all of the Christmas stuff out already!
