Not yo momma's meatloaf.....

No offense to my momma or my MIL.....   :)

I haven't ever tasted a meatloaf that was, well, yummy.   Never been a fan.  The Mr. looooves meatloaf and I have attempted to make it one other time.  Fail.   I used way too much brown sugar for the glaze. Gag.   
I love the "throw whatever you have in the fridge in a bowl and bake it" idea.   So,  I was determined to try it again but with ingredients that we like.  I didn't measure anything, I used ground turkey, and I baked it in a muffin tin.  Success!!!!

In a big bowl I put:
Ground Turkey
Lawry's Seasoned Salt
Crushed Peppercorn
1 Egg
Chopped Onion
Chopped Mushrooms
Cheddar Cheese
Soy Sauce
Worcestershire Sauce
Ketchup (lots)
Breadcrumbs
I mixed it all up and added a more of the items above depending on the way it looked.  Seriously, no real measurements..sorry. 
Then I mixed lots of ketchup, a small squirt of mustard, and a shake of Worcestershire sauce and I put a dollop on top of each muffin scoop.
Bake for 45 minutes at 350 degrees. 
(Spray each tin and put some water in the tins not used so they don't burn in the oven.) 
 Unlike momma's dinner...  you can even serve these little bites of deliciousness with nothing green and/or no mash taters. (which I always heard was a MUST when making traditional meatloaf.)  We were rebels tonight and had 2 yellow sides...I know, crazy!!!!
This recipe was husband approved....  and he even went back for seconds.    Oh, the satisfaction of my hubby having a full tummy courtesy of me.   It's all about the small stuff.

  1. ha, I HATE meatloaf too but hubby loves it. You are nicer than me...never tried making it! Maybe I will get a wild hair and try this soon. :)

  2. :) seriously, that is the reason why i love cooking so much. i love when he enjoys one of my home cooked meals!

    and that looks amazing. i have never been a fan of meatloaf either {my mom never made it} and so i have never made it because i didn't like it ... i just might have to try your recipe :)
