I usually try to have healthy sides but........
You know the drill-oversized portions and little to no veggies/fruits=comfort to my tummy after a looong day. No judging!! :)
You need:1 small onion, chopped and sauteed
about 3 cups of cooked chicken (Thank you Tom Thumb for the roasted chicken!)
1 can of black beans, drained
1 can of rotel, drained
1 tub of Santa Fe Blend Creme
Mexican Style Cheese
4 flour tortillas
I might add a can of mexi-corn next time
Pre-heat oven to 350.
Heat up onions, rotel, black beans, and chicken on the stove.
Add the Santa Fe Creme!
Spray oven pan
I layered the tortillas like lasagna noodles and spread the delicious mixture inside the layers. (Don't forget to make a layer of cheese on the bottom and the top of the tortillas!)
Cook for 15 minutes or so.....and then you can stuff your face!!!
The Mr. even went for another round!
Last weekend for "date night" we watched The Fighter. We really loved how the story was told. So many movies we have seen are filled with fluff and just plain nonsense (which can be mindless and just what we are looking for) but this was a quality movie. Any other movies we should add to the "date night" list?
Several weeks ago we got all dressed up and went to a work event for The Mr. The theme was casino night! We played a few hands, ate little finger foods, and had a cheers. I am so thankful my love works so hard for us...he deserved the night out even though I was ready to snooze at 9:00.....it was a school night!!!!
